gluten free goodness

We aren’t gluten free around here, but these are so good that I just might convert! Jennifer brought them to Jill and Jill shared one with me and I emailed Jenn right away for the recipe. They are easy and super rich and you probably have the ingredients on hand. Jennifer makes them and freezes them for her kids’ lunches. She's brilliant, no? If nothing else, the freezer is an excellent hiding place so these don’t get eaten instantly.


Here is the recipe. Mine stuck to the paper, but you probably have some trick to prevent that and it really didn’t slow us down too much!

Gluten Free Mini Chocolate Torte

Ingredients

  • 4 ounces fine-quality bittersweet chocolate (not unsweetened)
  • 1 stick (1/2 cup) unsalted butter
  • 3/4 cup sugar
  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder plus additional for sprinkling

Directions
1.     Preheat oven to 350 degrees.
2.    Chop chocolate into small pieces. In a double boiler or metal bowl set over a saucepan of barely simmering water melt chocolate with butter, stirring, until smooth. Remove top of double boiler or bowl from heat and whisk sugar into chocolate mixture. Add eggs and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined. Pour batter into muffin tins and bake in middle of oven for 20-25 mins .
3.    Freeze the muffins for easy, gluten-free, lunchbox treats.
*I once tried espresso powder instead of cocoa powder. Yum!



On an unrelated note, I am trying to sneak this link in without my whole family seeing it. I came across this the other day and think they would make lovely presents for all the adults on my  Christmas list. Everyone can help in some way, and they are so solid and beautiful and useful.

Do all cats have a penchant for the computer keyboard? It would drive me crazy if he weren’t so darn cute! He’s looking to the heavens for forgiveness for using our dining room table legs as a scratching post. They are shredded. Luckily they were 'rustic' to begin with. He also ‘nurses’ anything remotely fuzzy. It drives Matt crazy. He wins lots of tickets or trips. Does anyone else out there use that expression?

As in....

"%$#&*#$  @#$%!!!!! That idiot beast is sucking my new cashmere sweater! You’ve won a trip!”

And he gets flung out the door. Not violently, but certainly often.

Poor Puss. He’s cute, though.

  2. I was never one for eating sweets until I hit my forties and wow! those look good.
    I am all for DIY gifts. I need to show you the cutting board my husband made for me out of oak; it's a pig [which I have collected since I was 16].

  4. You know, we aren't gluten free either, but I love gluten free recipes too! I might as well just convert. I have a delicious gluten free chocolate banana bread recipe that I might have to share with you!
