I got a package in the mail the other day from my friend, Kim. Among the assorted Hawaiian sweets was a bag of gold. Pure Kona from Maui. Mornings are supreme, my friends.
I thought I’d whoop up some granola to go with it.
I looked at my recipe and made some tweaks and changes, if only because I like to use what I have on hand.
I did not have any high oleic oils hanging around, so I used ghee and raw coconut butter.
I added millet and smatterings of almost empty nut jars....almond, pecan, cashew, flax, sesame, and walnuts. Not much of any of these, mind you. Just the dregs.
It was/is yummy. I got caught up in the moment and made about 3 tons of the stuff, enough to get us through the apocalypse.
Just head over to my house when you run out of provisions.
The world will be in chaos, looting and pillaging, but we’ll be eating granola, tucked under a mountain.
I’ll even save you some java.

My parents gave me the platter for Christmas. It’s an original, by my friend Rebecca.
Back before the kids, I made pottery with her, and a wonderful group of women in a funky old warehouse in Athens, GA.

Looks delicious! So glad you're enjoying the java. It's funny, I made granola the other day too. I tried a new recipe from the last issue of Cooking Illustrated, it was different than other granola recipe I've tried, mostly in that it called for you to spread the granola in a pan and press it down so it bakes into a big brick. Then you break it apart and add the dried fruit in.

yum! sitting here drinking my coffee and am a bit jealous it isn't kona. your granola sounds delish. i miss putting nuts in granola. i miss nuts period. but dang, i love my little nut-allergic mighty nacho.

ReplyDeleteI make granola every week. My favorite way is to add pecans since nuts are crazy expensive and I always have them in the freezer.
Dreaming of Hawaii...but that coffee and and granola sure has got me thinking *lunch* at 10 am...hmmm that works.

Yum! I dont know why I'm so afraid to make granola? I envision an oven filled with smoke and some sort of burnt concoction on a pan....
ReplyDeleteI made granola yesterday too! I don't drink coffee, but I do drink tea... and that's good for an apocalypse, right?
ReplyDeleteI love making granola too. And drinking coffee. I do not really like the texture of nuts, so i grind mine up into a coarse meal and then add it in. So good!
